SPICY PISTACHIO MIX


2 Cups Pretzels

2 Packs Jalapeno Lime Pistachios

1 Egg White

1T Honey

1T Ranch Powder


Combine egg and honey, whip until frothy. Add pistachios and pretzels. Bake on a cookie tray lined with parchment for about 10-12 minutes until egg is cooked. Let cool and toss with ranch powder in a gallon size zip plastic bag. 



CHORIZO CHILI DOGS


9 oz Cacique Chorizo

1 Cup Mild Salsa

Hot Dog of Choice

Bolillo Rolls from Kroger Bakery

Cacique Queso Fresco

1 Cup Cacique Mexican Crema

2 Limes, juiced

2 T Cilantro, chopped

1/2 t Garlic Powder

1/2 t Cumin Powder

1 t Salt

1 T hot sauce


Cook chorizo loosely in a pan, with a paper towel soak up a little fat. Add salsa and cook on medium heat for 5 minutes. 

While chorizo is cooking, in a bowl combine crema, limes, cilantro, garlic, cumin, salt and hot sauce. Then crumble queso fresco. 

Build chili dogs immediately when all items are prepared. 

I recommend boiling hot dogs for this dish.

TAILGATE KEBABS


2 lb Ground Turkey

1/2 cup Oriental Wok Bourbon Chicken Sauce

1/4 cup Diced Onion

1/4 cup Chopped Cilantro


5 oz Shredded Carrots

1 Sweet Onion, sliced

1 Serrano, sliced thin

12 oz Seasoned Rice Vinegar 

4 oz Water



Bring vinegar and water to a simmer. Pour over onion, Serrano chili, and carrots. Let sit at least an hour. Safe up to 1 week refrigerated.


Combine turkey, bourbon sauce, onion, and cilantro. Form 6-8 hot dog size skewers. Bake/grill/air fry until 165 degrees. Should be firm to the touch.


Served on a Kings Hawaiian Hot Dog Bun.




2 INGREDIENT PULLED PORK


Carne Asada Seasoning 

Pork Shoulder


Completely coat shoulder with seasoning, about 1/4-1/3 cup.

Roast 4 hours, uncovered at 325, remove from oven and let rest for 30 min while lightly covered in foil.


Uses:


TACOS: tortilla shells, Mexican blend shredded cheese, tomatillo salsa, cilantro


TAQUITOS: 2 cups meat to 1 cup Mexican Blend Cheese, dip tortillas in cooking juices. Roll and bake at 400 for 20 minutes. Let rest on paper towels. 

Dipping sauce, chipotle ranch (1 cup) with lime juice (1 lime)
